Ingredients

  • 1 cup quinoa, cooked
  • 1 fresh mango, chopped
  • 1 handful of cilantro
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1 lemon, juiced
  • 1 can organic black beans, rinsed and drained
  • 1 cucumber, chopped
  • 1 tbsp red onion, chopped
  • 1/2 tsp chili powder
  • 1 tsp garlic powder

Instructions

  1. Mix ingredients and store in fridge.
  2. Serve cold or at room temperature, and enjoy!
