Ingredientes

  • 1 tbsp avocado oil
  • 3-4 cloves of garlic
  • 1 tbsp curry powder
  • 3/4 cup red lentils
  • 2 cups water
  • Sea salt to taste
  • Lime wedges & cilantro for garnish
  • 1 4 yellow onion
  • 2 tbsp ginger
  • 1/4 tsp crushed red pepper
  • 1 cup crushed tomatoes
  • 1 13.5 oz can coconut milk
  • 1 fresh mango
  • Jasmine rice

INSTRUCCIONES

  1. Heat oil in a medium saucepan.
  2. Add onions, and cook until golden brown (stirring often).
  3. Add garlic, ginger, curry powder, red pepper flakes and cook until fragrant.
  4. Add lentils and cook for about 1 minute (stirring often).
  5. Add tomatoes, water and coconut milk and bring to a boil.
  6. Reduce heat and simmer, stirring occasionally, until lentils are cooked.
  7. Add chopped mango and cook for another 7 minutes on low.
  8. Season with salt and pepper.Serve with jasmine rice (optional) and garnish with cilantro and lime wedges.
  9. Enjoy!
