Mango, Arugula and Beet Salad

Ingredients

  • 1 cup arugula
  • 1 large mango, peeled and diced
  • 4 small beets, roasted, peeled and diced
  • 3 Tbsp. walnuts
  • 1 Tbsp. toasted coconut flakes
  • 2 tbsp. almond oil
  • Juice of 1 large lemon
  • Sea salt and pepper, to taste

Instructions

  1. Combine arugula, mango, beets, walnuts and coconut flakes in a large bowl.
  2. Then whisk almond oil, lemon juice, sea salt and pepper in a small bowl.
  3. Once you have your dressing ready, drizzle over the salad and toss to coat.
  4. You may serve immediately and enjoy!
