Mango Jelly Sandwich

Ingredients

  • 8 ounces (1 cup) fresh mango puree
  • 2 tsp lemon juice
  • 1/4 cup raw, local honey
  • 1 tbsp fine ground flaxseed meal

Instructions

  1. In a medium saucepan over medium-high heat, combine the mango puree, honey and lemon juice.
  2. Bring to a rolling boil, stirring constantly.
  3. Boil for 1 minute.
  4. Turn off the heat and stir in the flax meal.
  5. Let cool uncovered in the fridge until set, at least 6 hours.
