Ingredients

  • 1 ripe mango, peeled, pitted and diced
  • 2 tbsp smoked almonds, coarsely chopped
  • 2 tbsp dried cranberries
  • 4 tbsp feta cheese
  • 4 tbsp low fat balsamic dressing
  • 2 large handfuls of baby spinach leaves, chopped

Instructions

  1. Mix first five ingredients together and toss. Serve over fresh spinach leaves.
  2. This salad pairs well with fresh grilled fish or chicken breast.
